Matcha Peanut Butter Cups



Serving: 12-14
Prep time: 50-60 minutes (mostly refrigeration time)


Ingredients:
- 1/2 cup of peanut butter
- 3 tbsp of softened butter
- 1 tsp of icing sugar
- 2 Cups of melted matcha chocolate (same recipe from previous post)

Directions:
1. Add peanut butter to the softened butter and mix thoroughly together.
2. Add the icing sugar and keep mixing until everything is well incorporated. Then add 1 pinch of salt and mix again.
3. Melt the matcha chocolate either by double boiling or microwave (stirring in between 20-25 seconds intervals)
4. Line a muffin tray with paper cups.
5. When the matcha chocolate has melted scoop a small amount just to cover the bottom of the paper cups.
6. Spread the chocolate evenly. This is the base of the cup.
7. Refrigerate for about 15-20 mins.
8. Take the chocolate out from the fridge. And scoop the peanut butter mix on to the matcha chocolate base.
9. Make sure that the peanut butter is centred and not touching the edges. Anything that touches the edges will poke out later.
10. Using the remainder of the melted chocolate, fill in the sides of the cup and them make sure all the peanut butter is covered by the chocolate.
11. Refrigerate for 20-30 mins. And then they're ready to serve!!
